here is a good recipe that i tried today to celebrate fathers day... for brent... who will someday be a father...
chili coconut chicken...
- 2/3 cup hot chicken stock (broth)
- 1/3 cup coconut milk
- 1 tbsp olive oil
- 4-6 boneless chicken breast, cut into small strips
- 1 small red chili, sliced thinly (i used crushed red pepper, b/c i didnt have a red chili)
- 4 spring onions (scallions), sliced thinly (i used a red onion b/c i didnt have scallions)
- 4 tbsp creamy or chunky peanut butter
- finely grated rind and juice of 1 lime
- boiled rice to serve (i boiled the rice with half water, half coconut milk to give it a hint of coconut flavor, after it was cooked i added kidney beans)
1. mix together chicken stock and coconut milk
2. heat oil in a wok or large heavy frying pan, and cook the chicken strips, stirring until golden
3. add sliced red chili and scallions to the pan, cook gently for a few minutes, stirring to mix all ingredients
4. add peanut butter, coconut cream, lime rind and juice and simmer uncovered, stirring, for about 5 minutes
5. serve with boiled rice
so easy, so good....

That sounds so good! I've had a can of coconut milk in my pantry forever. Now I know what to do with it :)
